I am Laura Daab, the Chef/Owner of Bikini Panini food truck and have been an avid cook most of my life. My favorite memories come from the yellow kitchen in my childhood home where my mom cooked and baked constantly. Learning from her and inspired by my favorite cuisine, I focus on Coastal Mediterranean cooking that incorporates lots of fresh, local, and seasonal ingredients.

Starting Bikini Panini was an unplanned opportunity and reinvention for me. My degree is in Marketing Communications and I was a theatrical producer for 20 years with a company I owned with my husband, Jim. We were hit hard by the Great Recession and shut our doors 5 years ago. I struggled to find a full-time, corporate job so I freelanced as a house painter, Marketing/PR Manager for a local theatre company, and worked on a frozen yogurt truck for a while.

One day, Jim drove by an auto auction near our house in Church Hill and saw a food truck being cleaned-up for sale. We bid on the truck and won! It’s a cute little step van that was repossessed from a Panini business in DC. “Why reinvent the wheel?’ I thought, so I spent the next 3 months fixing up the truck and developing my menu that along with 5 different Panini sandwiches includes Paella, Ratatouille with Curried Couscous and assorted baked good, ice cream and Italian Ices. I recently added a Kid’s menu that includes a Grilled Cheese Panini and a Breakfast menu with a Spanish Torta, Breakfast Panini and other goodies!

I’ve been in business since January of 2017 and have done very well. It’s challenging, rewarding, tiring, gratifying, and glorious! I belong to the Richmond Food Truck Association and I work pretty much all over the Metro Richmond Area. I’ve been a featured chef several times on WTRV’s “Virginia this Morning” demonstrating cooking segments of my food on Bikini Panini. Bikini Panini was also voted Best Food Truck in Virginia and featured in an article titled, “Top 50 Best Food Trucks in the US” by Eat This, Not That food magazine. You can find Bikini Panini at breweries and wineries, corporate lunches, street festivals, block parties, fundraisers, private events, weddings…pretty much any kind of an event that needs mobile food.

As an adult, I was never a person who desired to drink alcohol. There are times when drinking water, tea or soda doesn’t pair well with meals but being able to order a Heineken Zero, a Nonalcoholic Mojito or Gin and Tonic made with Tanqueray zero just hits differently(FYI we are the only company in the US selling Tanqueray Zero).

In 2019, after serving 20 years with the NY C Police Department, I decided to relocate to NC. Shortly thereafter, Covid restrictions were implemented. Rather than staying in bored, I looked into one of my dreams of selling street food. It was then that DeeVine Dogs was born. I was born in a small island in the Caribbean called, Barbados. In 1981, I was relocate to NYC and after High School I enlisted in the US Army.

My mom, rest her soul, encouraged me to joined the NYPD after leaving the Military

I decided to open up Fit Smoothie because during my time playing college football at UCF and then playing for the Jacksonville Jaguars, I found myself to be making either a smoothie or a protein shake twice a day. I think I just perfected the recipe that I became addicted to them and being an athlete it was a great snack or meal replacement that wasn’t full of sugar and I didn’t have any guilt for afterwards, haha.

A mini start to our big adventure
Ever have a donut change your life?

I have, 7 years ago, when I ate my very first mini donut. It was the classic cake recipe, fried to perfection and coated in cinnamon sugar. The taste could only be described by the involuntary “mmm” I gave out on the first bite. (If you’ve tried our donuts, you know exactly what I’m talking about).

My first bag was made by the same person who would later co-found Hopper’s. His name is Cody, and on that summer day he was my date. He took me to a neighborhood fair in a city park to see “the mini donut guy”, who Cody had been working with for nearly 10 years. Cody couldn’t believe I had not heard of this fair food before. He was excited to make the introduction. I, a glutton for dessert, was excited to eat pastries. The moment we arrived at the grounds, there was a sensational aroma in the air. It was sweet and savory, and it grew stronger the closer we came to the donut stand.

We walked up to the side door, where Cody was greeted with a smile by the man working inside. As the two joked, I became enthralled with the donut-making process going on in the background. Cody hopped inside and ran a fresh batch. He handed the bag to me, and with a grin he warned, “Careful, they’re hot”. He wasn’t kidding. I had to wait, but let me say the wait was worth it. When I took a bite I suddenly became smitten - with the donut that is.

So what happened next? Well, Cody and I continued on our way and kept dating. I began a promising career and after that summer, Cody hung up his apron for a 9-5.

It would be nearly 3 years before my “a ha” moment hit. I can’t recall when it struck, but I do remember how it consumed me. My vision was grand and I knew Cody was a key ingredient. It took real convincing to pull him out of retirement - but as you know, he’s back in the kitchen! Our partnership wasn’t complete until my dad, Lee, joined our endeavor. An entrepreneur at heart, he believed in our dreams and wanted to see it come to fruition.

In September of 2018 Hopper’s Mini Donuts was established. We began with borrowed and rented equipment. Today we own 5 trailers and an indoor stand. We currently operate in Minnesota, Wisconsin, Florida, and Colorado. We’re growing as a family operation as well, for Cody and I tied the knot in July of 2021 (can you guess what dessert was?).

Together, we strive to be the next fair favorite for our customers. Be careful though, one bite could change your life ;)

I started this business because I love the outdoors. I would attend festivals and events every weekend and see food trucks serving people. I began to think I can do this. This would give me an opportunity to enjoy the events and make money. I love meeting people and sharing stories. I love seeing the smiles on customers faces when they taste the product. Sweet Fun Concessions is known throughout the Midwest and Southeastern states for our fresh squeezed lemonade, homemade funnel cakes, homemade corn dogs, and excellent customer service.

We are the home of the "original funnel cake sundae challenge" and strive to have new products all the time. Try out our new Sin-on-a-stick, Fried Gummy Bears, or Fried Taffy!

We operate most of the summer in Iowa, Illinois, Indiana, Missouri, Kansas, Minnesota, and Nebraska and travel south in the winter to Oklahoma, Texas, Louisiana, Kentucky, Tennessee, Alabama, and Florida.

Sweet Fun Concessions was founded in 2003 with a small grill, a tent, and a dream. The business slowly built up over time and in 2009 we bought our funnel cake trailer. We sell fresh-squeezed lemonade, funnel cakes, corn dogs, kettle corn, fried twinkies and oreos, and cotton candy.

In 2012, the business expanded to include a Pie trailer which sells most of the menu above, but also includes homemade pie, cheesecake, cinnamon rolls, strawberry shortcake, and brownies!

In 2017, we expanded yet again and added our Frozen Delight trailer, which specializes in frozen drinks, smoothies, and cotton candy.

It was a struggle cause we wanted to incorporate her but didn't want to throw her real name out there on labels for customers to toss out so rather we went with Cindy Lou Who's Kettle Corn which we found out by purchasing a Christmas Tree at a Christmas Tree Farm that Cindy Lou Who was my mom's nickname from her work sister and work family at Hitachi in Berea KY and so we went with that and it has popped ever since and so we used her photo and made it into cartoon form and that's our logo!!!

Dave had pizzerias in Indiana that were voted the Best Pizza in Indiana, Milo’s Pizza. After moving to Florida three years ago, Dave and his Business Partner Robin became Realtors. However, Dave didn’t get the pizza sauce out of his veins. Dave and Robin bought a pizza truck and named it Milo’s Pizza just like his pizzerias in Indiana. By the way, he named his pizzerias after a disabled dog that he rescued. Dave bought Milo a wheelchair and Milo went everywhere with him.
