I am Laura Daab, the Chef/Owner of Bikini Panini food truck and have been an avid cook most of my life. My favorite memories come from the yellow kitchen in my childhood home where my mom cooked and baked constantly. Learning from her and inspired by my favorite cuisine, I focus on Coastal Mediterranean cooking that incorporates lots of fresh, local, and seasonal ingredients.

Starting Bikini Panini was an unplanned opportunity and reinvention for me. My degree is in Marketing Communications and I was a theatrical producer for 20 years with a company I owned with my husband, Jim. We were hit hard by the Great Recession and shut our doors 5 years ago. I struggled to find a full-time, corporate job so I freelanced as a house painter, Marketing/PR Manager for a local theatre company, and worked on a frozen yogurt truck for a while.

One day, Jim drove by an auto auction near our house in Church Hill and saw a food truck being cleaned-up for sale. We bid on the truck and won! It’s a cute little step van that was repossessed from a Panini business in DC. “Why reinvent the wheel?’ I thought, so I spent the next 3 months fixing up the truck and developing my menu that along with 5 different Panini sandwiches includes Paella, Ratatouille with Curried Couscous and assorted baked good, ice cream and Italian Ices. I recently added a Kid’s menu that includes a Grilled Cheese Panini and a Breakfast menu with a Spanish Torta, Breakfast Panini and other goodies!

I’ve been in business since January of 2017 and have done very well. It’s challenging, rewarding, tiring, gratifying, and glorious! I belong to the Richmond Food Truck Association and I work pretty much all over the Metro Richmond Area. I’ve been a featured chef several times on WTRV’s “Virginia this Morning” demonstrating cooking segments of my food on Bikini Panini. Bikini Panini was also voted Best Food Truck in Virginia and featured in an article titled, “Top 50 Best Food Trucks in the US” by Eat This, Not That food magazine. You can find Bikini Panini at breweries and wineries, corporate lunches, street festivals, block parties, fundraisers, private events, weddings…pretty much any kind of an event that needs mobile food.

I’m working at what I love and have learned there is always time for another adventure and a challenge to reinvent oneself! Cheers!

As an adult, I was never a person who desired to drink alcohol. There are times when drinking water, tea or soda doesn’t pair well with meals but being able to order a Heineken Zero, a Nonalcoholic Mojito or Gin and Tonic made with Tanqueray zero just hits differently(FYI we are the only company in the US selling Tanqueray Zero).
We create our own tea flavor profiles and use them on the truck.

About Us:
Oftentimes, the moments that seem inconsequential can unexpectedly shape the course of your life. This is what I learned on my path to opening Egg Stand.

I did not realize it at the time, but it all started in my teenage years. My parents owned a deli in Long Beach, NY where I spent many afternoons helping out in the kitchen. As an adult, I never expected to get into the food industry. I gravitated towards the corporate world instead, working in sales for a commercial construction company for over 15 years.

Food, however, was never entirely off my radar. I traveled frequently for my job, giving me the opportunity to explore the food scene in many major cities. On one trip, I found myself taken by a particular cart in Los Angeles’s Grand Central Market that specialized in egg sandwiches. I was charmed by the concept, and my memory of the company never quite faded. Years later, that memory became instrumental.

At 57, my life changed dramatically. I was suddenly laid off and found myself at a standstill. I was in the same position of many who become unemployed late in their careers. Given my decades of experience, I was overqualified for most open positions. After three months of sending out applications to no avail, I decided to spend a weekend in Vegas to take my mind off things. Upon reaching my hotel’s lobby, I saw something that astounded me.

It was the same egg sandwich cart I encountered in LA, and apparently the business had grown exponentially. There must have been 300 people waiting in line. I spent hours just watching the commotion, talking to the customers, and trying to decipher how the concept took off. After returning to my hotel room, I spent all night jotting down the notes that became the skeletal model of Egg Stand’s business plan. After returning to Dallas, I used a chunk of my severance package to open up my own food truck.

We started off small. Despite the lack of advertising, we grew fast. Our popularity was totally organic. News of Egg Stand spread via word-of-mouth and, before long, we found ourselves landing in some of the most popular food truck spaces in the city.

We’re still going strong today, serving our made-to-order egg sandwiches to residents throughout Dallas. If you eat here, prepare to rethink everything you thought you knew about the egg. We’re proof this versatile food need not be relegated to the breakfast menu. Our egg-based sandwiches are well-suited for lunch, dinner, or really any time of day. Feel free to stop by whenever and enjoy a bite.

We have been involved in the Hospitality/service industry for over a decade! During COVID a lot of restaurants and bars closed for a brief period time and some of them did not rehire their full time staff and management in order to try and save the expense on labor while there was great uncertainty in this world. Jobless with a ton of experience we decided to work odd jobs during the pandemic in order to save up enough money to open up our very own restaurant on wheels! We wanted to offer a menu that could cater to people of all ages and dietary restrictions to make sure we truly have something for everyone!

Come 2021 we made the trip from NJ down to VA in order to help start our business a little quicker, because at the time the mandates were a little looser and the abundance of opportunity in this area could not be surpassed. We wanted to incorporate our NJ culture and the type of sandwiches and cuisine we offer to the great people of the DMV area. We try to offer a creative menu to our customers that will hopefully having them coming back for more! We are Bill and Kate Bedortha, the happy and proud Owners of Rocky Mountain Wraps, in Conifer, CO. We spent over ten years running our Austin, TX based food company, Solar Falafel & Hummus bringing healthy food to the masses was our passion. Solar Falafel quickly became very well-known at festivals and events in Central Texas. Whether in the grocery stores of Texas or at the many Music Festivals, Street Fairs and Live Events across area, you would find us serving Grab n’ Go Pita Wraps and Healthy snacks with a smile, made with love.

From Austin City Limits Music Festivals to Willie Nelson’s Fourth of July Picnics, The Old Settlers Bluegrass Festivals to the Pecan Street Festivals on Austin’s infamous 6th Street, you could find Solar Falafel serving hundreds to tens of thousands of hungry, music lovers to rave reviews!

We love music, people and healthy food and missed the action so after taking a few years off and putting down Colorado roots we decided to bring our scratch-made, family recipes to the people by opening Rocky Mountain Wraps in 2019.

Rocky Mountain Wraps survived and prospered through the COVID Pandemic because of the high standards of safety for our staff, our patrons and ourselves, while serving and expanding our quality products without skipping a beat!

Rocky Mountain Wraps participates in local community events along with Catering Banquets, Weddings, Large Family Gatherings, as well as JEFFCO Schools PTA/Staff Lunches on and off our menu, offering options for all dietary needs.

As I sat at my kitchen table staring out the window into the busy morning of the city, I sipped my coffee and thought to myself



“This is it, I’m going to it.”

Thinking back on the last few years and the extreme changes that were thrown my way I couldn’t help but think that everything happens when it’s supposed to and for reasons we can’t quite comprehend.
Life is short, it’s fragile, and when it ends it’s devastating to those left behind. My aunt and uncle were, and still are two of the most influential people in my life and in 2018 they both were taken back home. We go through so many things, ups downs and everything in between during our very short years here and spending the last few as an ant marching on the highway, existing and going through the motions of the “daily grind” really put me in a low spot. I have always had a passion for food, the industry, the beautiful chaos of the kitchen and the smile on someones face as they take a bite of the food I’ve prepared. An itch to start my own food truck has always lingered in the back of my mind as well and for some reason, the passing of my amazing aunt sparked this passion once again.

I had really no idea even where to start, my mind was going crazy, I was sipping bourbon, listening to some Widespread Panic (they are my 2nd passion) and all of a sudden … Darleen’z..that was my food truck name.. Not really sure what I was going to make in that damn truck.. but the song Arleen (by Widespread) and my beautiful aunt Darlene.. well, those two just merged and it was right.. I smiled and sipped some more bourbon.

Not long after, having dinner with my friend Sarah at the Rock Bottom Brewery one night we were talking about food truck nonsense, concepts, names, etc. and she blurts out Dillaz, already knowing about Darleen’z. I had no words. Darleen’z Dillaz was born.
