Chef Shauna (Fetterman) Lehde founded Girl's Got Balls LLC in July of 2020 in the middle of the Covid-19 pandemic. Shauna started serving her food under a tent to get the name of the company out there. 1 year later she was able to purchase the food truck trailer they use to serve. In 2022, Carrie Jones (sister in-law of Shauna) joined the company as partner. They went on to compete on Food Network's Great Food Truck Race only to be defeated by equipment failures. That didn't stop us! Shauna and Carrie continued on serving the next season and volunteered at a local school district to help mentor and teach the students what it's truly like to own a food truck. It all started with a dream, as a kid i wanted to one day own a restaurant and come up with different ideas that were just a little different from the normal options. thinking that was never going to happen, I become a truck driver. until one day I got sick and lost my CDL. having to come up with an option to take care of my family we bought out a family member who had a restaurant in historic downtown Sanger, TX, On aug 4th, 2023 we opened Bear's Cafein a 2100 Square foot restaurant space. As all new businesses do we had our struggles from a city wide rolling black out 6 weeks after grand opening taking our all the cooling equipment to employees that couldn't do the job correctly to a small town looking at us as outsiders and not wanting to support. we pushed through and eventually we found the key to it all the marketing was working, we won over a lot of that community. at the beginning of 2024 we started getting asked to do large catering jobs and unfortually we as a team of 3 could not be in 2 places at 1 time, with our lease being up in may we weighted out the options stay in Sanger or move to food trailer and go on the adventure of large events. we then made the choice to switch over to a food trailer and close out sanger. we have enjoyed the people that we have had the pleasure to meet and do business with both in Brick n mortar and in our food truck. we are not your average food choice but we put love in everything we do, from our brisket to our burgers to our signature dish the loaded Mac n cheese bowl. this business name has so much meaning to us as the name sake to my wife's grandfather's restaurant business in Indiana (big Bear) to several dogs including my service dog (bear) the name alone means the world to me and my family as well as so much love.

About our Chef:

Chef Atulya Singh, comes from a small town based in the heart of North India, where love and respect for food were one of the pillars of family education. He got early culinary inspiration from his Grandmother, who has been an excellent cook with great imagination. He spent most of his time in her kitchen where she was constantly cooking up delicious meals and teaching all her family recipes of authentic Indian Food. He was inspired by how food can beautifully narrate a story and convey cultural ideas. He pursued his passion through a degree in Hotel Management and further honed his skills at the reputed Culinary Academy in India, Hyderabad, ( One of the 10 best Academies of the world ), under the mentorship of Chef Sudhakar Rao and guidance of renowned faculties of the Academy.

He took all his learnings to gain experience at some of the most prestigious hotels in India like The Taj, Marriott & ITC Maurya in New Delhi. He made the big move to the United States and experimented with his culinary skills in various other specialties, the most recent one being at Bon Appetit of Compass Group, where he was heading some of their premium accounts like Google, Amazon & Cloud Era. Having a broad spectrum of culinary experience across Hotels & Industrial Kitchens, gave him the knowledge and skillset to elevate his career to entrepreneurship.

Additionally and advantageously Chef Atulya Singh is trained in Food Hygiene & Safety Acts – The Food Standards 1990, The Food Safety Act 1990, Food Safety Regulations (General Hygiene) 1995 & Food Safety (Temperature Control) 1995, and has meticulously complied with the above legislation and carried out periodic audits to ensure the quality of food served to the guests.

“Atulya Bharat” bears testimony of his love and passion for good quality food. The menu is close to his heart as he will be reviving some of his family recipes from North India.

I am Laura Daab, the Chef/Owner of Bikini Panini food truck and have been an avid cook most of my life. My favorite memories come from the yellow kitchen in my childhood home where my mom cooked and baked constantly. Learning from her and inspired by my favorite cuisine, I focus on Coastal Mediterranean cooking that incorporates lots of fresh, local, and seasonal ingredients.

Starting Bikini Panini was an unplanned opportunity and reinvention for me. My degree is in Marketing Communications and I was a theatrical producer for 20 years with a company I owned with my husband, Jim. We were hit hard by the Great Recession and shut our doors 5 years ago. I struggled to find a full-time, corporate job so I freelanced as a house painter, Marketing/PR Manager for a local theatre company, and worked on a frozen yogurt truck for a while.

One day, Jim drove by an auto auction near our house in Church Hill and saw a food truck being cleaned-up for sale. We bid on the truck and won! It’s a cute little step van that was repossessed from a Panini business in DC. “Why reinvent the wheel?’ I thought, so I spent the next 3 months fixing up the truck and developing my menu that along with 5 different Panini sandwiches includes Paella, Ratatouille with Curried Couscous and assorted baked good, ice cream and Italian Ices. I recently added a Kid’s menu that includes a Grilled Cheese Panini and a Breakfast menu with a Spanish Torta, Breakfast Panini and other goodies!

I’ve been in business since January of 2017 and have done very well. It’s challenging, rewarding, tiring, gratifying, and glorious! I belong to the Richmond Food Truck Association and I work pretty much all over the Metro Richmond Area. I’ve been a featured chef several times on WTRV’s “Virginia this Morning” demonstrating cooking segments of my food on Bikini Panini. Bikini Panini was also voted Best Food Truck in Virginia and featured in an article titled, “Top 50 Best Food Trucks in the US” by Eat This, Not That food magazine. You can find Bikini Panini at breweries and wineries, corporate lunches, street festivals, block parties, fundraisers, private events, weddings…pretty much any kind of an event that needs mobile food.

Oftentimes, the moments that seem inconsequential can unexpectedly shape the course of your life. This is what I learned on my path to opening Egg Stand.

I did not realize it at the time, but it all started in my teenage years. My parents owned a deli in Long Beach, NY where I spent many afternoons helping out in the kitchen. As an adult, I never expected to get into the food industry. I gravitated towards the corporate world instead, working in sales for a commercial construction company for over 15 years.

Food, however, was never entirely off my radar. I traveled frequently for my job, giving me the opportunity to explore the food scene in many major cities. On one trip, I found myself taken by a particular cart in Los Angeles’s Grand Central Market that specialized in egg sandwiches. I was charmed by the concept, and my memory of the company never quite faded. Years later, that memory became instrumental.

At 57, my life changed dramatically. I was suddenly laid off and found myself at a standstill. I was in the same position of many who become unemployed late in their careers. Given my decades of experience, I was overqualified for most open positions. After three months of sending out applications to no avail, I decided to spend a weekend in Vegas to take my mind off things. Upon reaching my hotel’s lobby, I saw something that astounded me.

It was the same egg sandwich cart I encountered in LA, and apparently the business had grown exponentially. There must have been 300 people waiting in line. I spent hours just watching the commotion, talking to the customers, and trying to decipher how the concept took off. After returning to my hotel room, I spent all night jotting down the notes that became the skeletal model of Egg Stand’s business plan. After returning to Dallas, I used a chunk of my severance package to open up my own food truck.

We started off small. Despite the lack of advertising, we grew fast. Our popularity was totally organic. News of Egg Stand spread via word-of-mouth and, before long, we found ourselves landing in some of the most popular food truck spaces in the city.

We’re still going strong today, serving our made-to-order egg sandwiches to residents throughout Dallas. If you eat here, prepare to rethink everything you thought you knew about the egg. We’re proof this versatile food need not be relegated to the breakfast menu. Our egg-based sandwiches are well-suited for lunch, dinner, or really any time of day. We bought a food truck and kicked off our business in 2016 at the Outdoor Retailer Trade show. Soon after we started serving up Aloha all over Southern California. Nothing but Acai Bowls and Shakkas! I decided to open up Fit Smoothie because during my time playing college football at UCF and then playing for the Jacksonville Jaguars, I found myself to be making either a smoothie or a protein shake twice a day. I think I just perfected the recipe that I became addicted to them and being an athlete it was a great snack or meal replacement that wasn’t full of sugar and I didn’t have any guilt for afterwards, haha.
